Feb 8th - March 7th

I know - I am almost two weeks early on my blog for menus - but I woke up at 5 am this morning and figured I better use that time productively (after playing on f-book for an hour).  So many of those recipes from the last menu were so very good!!!  Hopefully this cycle will be good as well.

I am working almost full time (gulp) so I am trying to make the M-F meals easier.  I also lucked into getting steak at Sweetbay in the "we have to sell today or toss" area - so for the first time in a long time we will have steak on the menu!  Kids are very excited about that!

The next cycle will be a little late - the kids and I are heading up to Michigan for spring break!  First time in almost two years we are going home!!!  Thus we won't need a menu for the week of March 8-16th.  Hubby will be on his own (I hear frozen pizza in his future!)

Remember - most dinner meals are served with a side salad and bread and butter.  Milk is usually what is served with dinner.  Dessert is usually fresh fruit.

Finally posting my menus again.  I start my new job as a dietitian at WIC on January 3rd - so I have to make my menus try to fit my new working schedule.  I will be working four days a week - not sure which days yet - so I try to set up meals during the week that will work with a work schedules.  I look forward to working WIC again (I loved working at WIC in Michigan) - but I am sad to be leaving my kids to work.  I am thankful I have an amazing neighbor who will be watching my kids though.

Menu 8/23-9/6

So it is back to school time!  I can't believe September is in this cycle!  Doesn't feel like fall is around the corner - yet in Florida it feels like perpetual summer so it is unreal that time even passes!

Here are my menus.  I do have some desserts in this cycle.  With the kids all at school this year (first time in 13 years I won't have a child home with me!) I think I will try some desserts.  Most of my desserts are easy - cake mix - jello - sort of thing (still too hot to bake here!) - but the kids still enjoy those things!

For vegetables - we almost always have a side salad with our meals.  We usually have fruit for dessert (except where something else is written!)  For items with a recipe - please click on the food item and the link will open up!!!

Friday:  Pizza (we order this in as a treat!)

Saturday:  Tacos made from chicken meat.

Sunday:  Crowd Pleaser Chicken, pudding.

Monday:  Burrito Pie, Jello

Tuesday:  Lentil Soup ( just sounds good), Bacon-crumble Apple Pie

Wednesday:  Beefy Hash Brown Bake

Thursday:  Rotisserie chicken, garlic noodles, Brussels sprouts.  (I toss a chicken on our rotisserie - so good)

Friday:  Chicken and Ducklings, boxed cake.  OK - this is my version of chicken and dumplings.  I don't ever measure anything with this - I just  make a broth out of the bones from the chicken the night before.  My dumplings are more like large noodles that I make.  The kids love it - but there is no way I could write a recipe for it!

Saturday:  Grilled cheese sandwiches, lipton noodle soup, jello

Sunday:  Lasagna, Garlic bread (recipe is on bottom of linked page), green beans

Monday:  Left over Lasagna!

Tuesday:  Parmesan Fish, Scalloped potatoes, peas and carrots.  For the potatoes I buy three boxes of julienne potatoes (the dried kind that is right next to the mixes of scalloped potatoes), I make like directed - except I add a chopped onion, 2 cans of cream of mushroom soup AND 1 c shredded co-jack cheese to the ingredients list.

Wednesday:  Sausage, orzo skilletPatty's pie.

Thursdays:  Moe's!  The fifth of every month our family tries to go to Moe's!  They run a special on the fifth of the month so my entire family can eat until we feel slick for about $40!

Friday:  Cook out in the Cul de Sac. . . . we still have hotdogs to bring.  Haven't decided what else to bring yet!

Hope you enjoy the menu!  Cooking for the family is fun.  Hopefully it cools down so so we can do some real baking!

Menu - 8/9

Hello everyone!

Just passing on another two week menu - this will be starting on Friday!  Remember - we always have a side salad with each meal.  Dessert is usually fresh fruit!  It has been crazy here the last week or so - getting ready for school - so I didn't get a lot of time to do a lot of new recipe research - but I did toss together our menu and I am sharing it with you!!!  I am going to try to link each recipe that I have online right in the description!!

Friday:  We are having a cookout this day with the neighbors - so we are bringing Hot Dogs on the grill and a wonderful Mac n Cheese that goes over well for cookouts.

Saturday:  Crockpot Tortellini

Sunday:  Red Chicken Chili with rice and blackbeans.  With this recipe I always use the cilantro - never the green onions.

Monday:  Sun dried Tomato Fettuccine with spinach.

Tuesday:  Cheese burgers, corn on the cob, FF (I work this day!)

Wednesday:  Pollo Loco (this is so darn good!  I get the queso from Sam's club!)

Thursday:  Evelyn's 11th birthday!  We go out to eat on birthdays so I won't be cooking this day - but I will be making a yummy cake!  Chocolate cake - I used boxed but instead of water I use coffee when I make it.  Makes it have a better flavor!

Friday:  Haluski (traditional polish meal - so yummy - pure comfort food but not real healthy!)

Saturday:  Grandpa's chicken, mashed potatoes, green beans. (I will post my recipe a little later for this - it is pretty much braised chicken.  My Grandma always made this and it was so yummy - she said it was my Grandpa's favorite food!)

Sunday:  Egg Salad Sandwiches, fresh fruit, Chips - I work here!

Monday:  Maryland's chicken.  This is my last day of work and there is a fried chicken place right next to where I work - the kids have been begging me to bring some home.  I may be a dietitian but we to have days where we eat out!!!

Tuesday:  Chicken fried rice

Wednesday:  Salisbury Steak, rice, asparagus

Thursday:  Pork roast, potatoes, carrots.  This is so easy if you have never done it before.  Get a roast big enough for your family.  Rinse it off and pat it dry.  In your crock pot put a bag (or two depending on the size of your family) in the bottom, cut up potatoes on top, then cover with the roast.  Take one cup of water or broth and pour over it and a can of cream of mushroom soup on top of it all.  Cook on low for 8-10 hours.

Hope you all enjoy the recipes.  Sorry there are so many out to eat days - but with birthdays and school starting things are a little buys around here!
